Vegetable Tagine with almond & chickpea couscous

If you are a frequent visitor to my blog you may already be aware that my cooking is often led by what's on special offer in the supermarketLast week it was Butternut Squash that was on offer, I didn't get around to making anything with it last week, so had a look for a recipe and found this 
on the BBC Good Food website.
 
I really enjoyed the couscous which has harissa mixed through and the chickpeas were a great addition, I took the pic before remembering to add the toasted almonds, but they added a very pleasant crunch.
The Tagine itself was dominated by the flavour of the coriander and mint that is added at the end of cooking.  I felt there needed to be more depth of flavour and I think this is down to the stock and the seasoning.  The recipe does recommend a strongly flavoured vegetable stock, I used Marigold Boullion Powder, but that still did not seem enough.  I would definitely make this again and experiment with different flavours in the stock, probably use less coriander and mint too.

Looks delicious. I tried couscous at a restaurant recently and didn't like it at all. It was very dry and tasteless. Yours has the sauce around it so I guess it's not dry. I have to give this couscous a second chance. Thanks for sharing.

Thank you for pointing me in the direction of this recipe, Janice. I was given a Tagine for my birthday and am currently experimenting with North African recipes. This veggie one sounds lovely, though I may leave out the prunes. (I like to keep my dinner and dessert separate!)

This looks really good Janice; I'm the same, I bought a butternut squash on special offer last week and now need something to do with it! I would be tempted to add some meat to this tagine :D

Well, it certainly looks pretty Janice, but like you I often have to tinker with recipes to make them my own. Hopefully, next time it will taste as good as it looks. Thanks so much for entering my cookbook give away competition.
